Abstract:
PROBLEM TO BE SOLVED: To provide soybean protein-containing food and drink capable of easily being stabilized by being mixed with raw material without using stabilizers and emulsifiers.SOLUTION: A specified protein-containing soy bean emulsified composition obtained without using an organic solvent from a specified soy bean stock is used. This soy bean emulsified composition is blended in such a manner that the content of protein in food and drink reaches 6 wt.% or lower, and further, sugar of wt.% three times or more to the protein content, an alkali metal salt of wt.% 0.3 time or higher and pH regulating acid. Soy bean protein-containing liquid good and drink are uniform and have no aggregates at the acidic pH of 6.5 or lower, and also satisfactory in flavor. Further, in the pH 4.5 or lower, stabilization can be obtained also in the case a bivalent metal salt such as a calcium salt is added. The soy bean protein-containing liquid food and drink are suitable for the utilization of beverages, seasoning or the like.SELECTED DRAWING: None
