Abstract:
To provide a loosening agent for starch-containing foods, which restrains reduction in quality, such as degradation in loosening property and unfolding property of starch-containing foods such as noodle and rice during storage compared to the conventional one, and enables efficient production of palatable starch-containing foods, and starch-containing foods made using the loosening agent.SOLUTION: Addition of a loosening agent for starch-containing foods, which contains 0.02 mass% to 10.0 mass% of fine gels with diameters of 1 μm to 1000 μm in median size and contains 1.0 mass% to 20.0 mass% of polysaccharide thickener and/or 0.2 mass% to 20.0 mass% of emulsifier, to starch-containing foods makes it possible to improve loosening property and unfolding property of starch-containing foods without largely changing texture and flavor.SELECTED DRAWING: None
