Abstract:
PURPOSE: To obtain the subject decomposed product resistant to degradation, having excellent solubility and thermal stability and useful as a protein source of a food or drink such as oral and enteral feeding or nutritional supplementary food by hydrolyzing β-lactoglobulin with a neutral protease.
CONSTITUTION: The objective decomposition product can be produced by hydrolyzing β-lactoglobulin used as a proteinous raw material with endo-type and/or exo-type neutral protease such as trypsin at pH7-9.
