Abstract:

PURPOSE: To obtain the title sausage having no significant difference from ordinary sausage in texture and taste by blending animal meat with a mixture of ground animal skin and water, grinding and mixing the blend, adding water, regrinding and remixing.

CONSTITUTION: 50-60wt.% animal meat having ≤5wt.% fat content is blended with a mixture of ground animal skin and water so as to give 5-15wt.% animal skin in the final product. Then the blend is ground by a cutter, mixed, further incorporated with water in an amount to give 25-35wt.% water in the final product, reground by a cutter and remixed to give the objective sausage having ≤5wt.% fat.
