PURPOSE: To always bake bread well by feeding air into a material container during kneading, and around the container during baking, using a device that bakes bread by procedures comprising putting bread materials and water in the material container, kneading the materials with water, and leavening the materials.
CONSTITUTION: Bread materials containing yeast fungi and water are put in a material container 3 and a kneading rotary blade 4 is rotated by a motor 9 via a belt 7 to knead the materials until an appropriate condition is achieved by the frictional heat generated and hot air heated to about 45°C by a heater 14 and blown by the normal rotation of a fan 15 caused by a fan motor 16. After procedures including leavening, degassing and molding-leavening, baking is started with the fan 15 reversed to feed the hot air heated by the heater 14 around the container 3 to circulate the temperatures inside the oven indirectly to provide an even temperature distribution, thus making the surface of the bread baked assume an even color.
