To improve the distribution ratio of fractions containing maltose at high contents by performing, in principle, the division between monosaccharides and oligosaccharides having largely different affinities to a separating agent.
Since a method for manufacturing maltose does not aim at oligosaccharides and the fractionation between oligosaccharides, but aims at the fractionation between monosaccharides and oligosaccharides having largely different affinities to a separating agent, namely, the fractionation between glucose and maltose, the distribution ratio of fractions containing maltose at high contents can be increased and the processing amount of a raw solution and the production of maltose per unit amount of separating agent can be increased. In addition, maltose can be prepared efficiently by suppressing the using amount of an eluate. At the time of preparing maltose, maltotriose is decomposed by using an amylase having a maltotriose decomposing activity. When a raw solution which converts the other oligosaccharides than maltose into glucose and maltose is used, the distribution ratio of fractions containing maltose at high contents can be increased to ≥71% by chromatographic separation.
