To provide a method for producing instant adzuki bean food.SOLUTION: The inventive method includes: a pretreatment step for subjecting an adzuki bean to at least one treatment of drying by freezing and drying with superheated steam; a ripening step for ripening the adzuki bean having undergone the pretreatment step; a drying step for decompressing and drying the adzuki bean having undergone the ripening step; and a hot-air swelling step for applying hot air to swell the adzuki bean having undergone the drying step.SELECTED DRAWING: Figure 2
