Abstract:
To provide a manufacturing method for a Monascus pigment preparation with improved stability relative to a light.
The manufacturing method for the Monascus pigment preparation is characterized in that the Monascus pigment, a hydrophobic protein and polyphenol are dispersed in an alcohol/water mixture solution and the obtained dispersion is dried.
