Abstract:

To provide an antiseptic treatment method comprising sterilization of saprophytic bacteria on the surface of raw garlic to prevent degradation of raw garlic during storage.

The method for antiseptic treatment of raw garlic to suppress proliferation of putrefactive bacteria comprises immersion of raw garlics in an aqueous solution of lactic acid having a concentration of 0.1-1.0 wt.% to impregnate the garlics with lactic acid, and drying of the garlics at a low temperature.
