Abstract:

PURPOSE: To increase the food preservation effect, by generating CO2 gas independently to ethanol vapor, thereby eliminating the restriction on the quantity of the CO2 gas.

CONSTITUTION: A CO2-generating composition containing a carbonate (a compound which evolves gaseous CO2 with an acid) such as ammonium carbonate, ammonium bicarbonate, etc. and an acid is put into a moisture-sensitive gas- permeable film bag, and ethanol is put into the same or another bag. The bag is placed separately from the food to be preserved. The ethanol is anhydrous ethanol absorbed to a carrier such as silicon dioxide and the direct contact of the ethanol with the gaseous carbon dioxide generating composition should be prevented, because the use of hydrous ethanol may cause immediate evolution of CO2 gas with water contained in the ethanol.
