To provide a method and an apparatus for producing a paste product (including a dough product), capable of producing the dough product having a gluten structure by a simple and efficient method.
A milled product of cereal flour as a dry component is mixed with a liquid to give a dough lump body, namely the dry component is fed to an extruder 10, the liquid is fed to the dry component in the extruder 10 to give the dough lump body, which is kneaded. The dough can be completely prepared in the extruder 10 and compressed to a paste product of fixed shape at the outlet of the extruder 10. Consequently, not only an efficient and hygienic paste product, namely a dough product can be produced but also the ratio of air in a finished product can be accurately set.
