To provide a method and a device for regulating malted rice-making environment in an automatic malted rice-making apparatus mainly usable for solid fermentation.
A space from the surface of a malted rice raw material 5 accumulated on a culturing floor 4 to the ceiling surface 1A of a wall body 1 in the interior of the malted rice-making apparatus is separated to a first environment 6 at the vicinity of the surface of the malted rice raw material 5, a third environment 7 at the vicinity of the ceiling surface 1A of the wall body 1 in the automatic malted rice-making apparatus, and a second environment 8 between the first environment 6 and the third environment 7 to separate the space between the surface of the malted rice raw material 5 and the ceiling surface 1A into the three sections. The heat and water diffusing from the first environment 6 contacting with the surface of the malted rice raw material 5 by natural convection are removed from or held at the second environment 8 by generating an air flow in the horizontal direction in the third environment 7 to condition the air in the third environment. The disturbance of the air flow by the natural convection in the first environment is prevented by the air flow of the conditioned air in the horizontal direction in the third environment 7.
