This method of extraction is equipped with a process of freezing treatment for performing the freeze treatment on the plant raw materials containing the pigment and perfume, and a process of penetration treatment for performing the penetration treatment of the freeze-treated plant raw materials with any one of liquid among an aqueous organic acid solution, an aqueous organic acid salt solution, an organic solvent, a mixture of the aqueous organic acid solution with organic solvent, a mixture of the aqueous organic acid salt solution with organic solvent, and water. It is possible to install a crush treating process for performing the crush treatment on the plant raw material before or after the freeze treatment process, and it is preferable to set the temperature of the liquid in the penetration treatment process as 30C.
