Abstract:
PROBLEM TO BE SOLVED: To provide a method for simply forming an edible coating extremely excellent in binding property to an ingredient, and a method for manufacturing a coating food product where the edible coating is formed on an ingredient surface.SOLUTION: An edible coating is formed on an ingredient surface by steps 1-3 as follows: (step 1) a step of preparing an edible coating solution which contains at least one kind selected from the group consisting of alginic acid and/or its salt, carrageenan, gellan gum, pectin and xanthan gum, and has pH of 3.6 or more and less than 4.5; (step 2) a step of bringing the edible coating solution prepared in the step 1 into contact with an ingredient; and (step 3) a step of bringing the ingredient brought into contact with the edible coating solution in the step 2 into contact with a polyvalent metal salt-containing solution.
