Abstract:

To simply and readily obtain purified glutamic acid crystal remarkably rapidly in a high yield on an industrial scale in comparison with a transition and recrystallization method for L-glutamic acid purification which is conventionally carried out in general.

In this method for L-glutamic acid purification by transition and recrystallization, crude crystal of L-glutamic acid containing L-glutamic acid α-crystal is kept in an aqueous medium in an amount sufficient to prepare a saturated solution of the L-glutamic acid crystal or less in the presence of activated carbon at ≥50°C and the boiling point of the aqueous medium or below until ≥about 30% of L-glutamic acid crystal is transferred to β crystal.
