Abstract:
To provide methods for improving sulfurous acid-producing ability of yeast, to provide variant polypeptides having an improved sulfurous acid elimination ability, and polynucleotides encoding the same, as well as methods for evaluating sulfurous acid-producing ability of yeast, and methods for selecting yeast having high sulfurous acid production ability.SOLUTION: A method for improving sulfurous acid-producing ability of yeast which comprises introducing a variation to a yeast is provided, the variation consisting of a particular amino acid sequence and comprising a variation of substituting the amino acid at a position corresponding to methionine at the 19th of an amino acid sequence with a nonpolar amino acid (X), such as valine, in a polypeptide having a sulfurous acid elimination ability.SELECTED DRAWING: None
