Abstract:

To provide a food material improved in appearance, palatability, digestive absorption, softening, hardness, taste, body and the like and a method for modifying the food material to produce the food material.

The food material is soaked in an enzyme-containing solution and treated by pressurizing under ≤1.04-50 atm. to penetrate the enzyme into the food material and react the enzyme in the food material.
