Abstract:

To provide a method for producing 1,5-anhydrofructose in which the optimal conditions for suppressing the variation in this compound and for inhibiting the proliferation of microorganisms are utilized.

A solution of starch or a starch hydrolyzate as a substrate is treated with an enzyme, α-1,4-glucan lyase, at a pH of 2.5 to 4.0, preferably at a substrate concentration of 20 to 40% to produce 1,5-D-anhydrofructose.
