Abstract:
To provide a method for producing a concentrate of astaxanthin of red natural coloring matter widely useful in the field of foods, medicines, cosmetics, etc., not to mention addition to feed.
The method for producing carotenoids containing astaxanthin in high concentration comprises extracting yeast of the genus Phaffia with acetone, concentrating the extracted solution to give crude coloring matter oil and subjecting the crude coloring matter oil to crystallization by adding a hydrocarbon-based solvent.
