To provide a method for producing Citrus depressa pericarp paste or a frozen product of Citrus depressa pericarp paste, that can further prevent propagation of microorganisms and is easily thawed without being in a hard frozen state even if the paste or the frozen product is in a refrigerated state at -20°C.
Citrus depressa squeezed residue is crushed by a grinder while adding a sugar liquid after enucleation or without enucleation, or enucleated at the same time as crushed by the grinder while adding the sugar liquid if the residue has not been enucleated until the step, to make the paste whose sugar content is at least 30%. The method for producing the Citrus depressa pericarp paste characterized by the above process is provided, and a method for producing the frozen product of Citrus depressa pericarp paste characterized by freezing the Citrus depressa pericarp paste obtained by the method is also provided.
