Fish scales are enzymatically hydrolyzed with a protease and an enzyme that can decompose fish scale structures to obtain the collagen peptide. At this time, the collagen peptide is extracted from fish scales through multi stage enzymatic hydrolyses, and the enzyme that can decompose fish scales is employed at the final step. Thereby the collagen peptide can be obtained in high yield. On a midway of the enzymatic decomposition, fish scales are preferably added as a raw material. Keratinase or chitinase is preferably used as the enzyme for decomposing the fish scale structure. The fish scales comprise those that are decalcified in an acidic area and the protease has the optimal pH on the acidic side.
