To provide a method for enzymatically producing cycloisomaltooligosaccharide (CI) with cycloisomaltooligosaccharide glucanotransferase (CITase), by which the contamination of CI with various bacteria can be prevented at an advantageous cost.
This first method for producing CI from dextran with CITase, characterized by adding one or more kinds of alkali metal chlorides to the reaction solution. The second method for producing CI from dextran with immobilized CITase, characterized by adding one or more kinds of alkali metal chlorides to the reaction solution. The first method for producing CI from the dextran with CITase, wherein the concentrations of one or more kinds of the alkali metal chlorides are ≥1.5 M. The second method for producing CI from the dextran with immobilized CITase, wherein the concentrations of one or more kinds of the alkali metal chlorides are 1.5 to 3 M. The first or second method for producing CI from the dextran with the CITase or immobilized CITase, wherein one or more of the alkali metal chlorides and CI are separated using activated carbon.
