Abstract:

To provide a raw coffee bean extract free from remarkable change in a chlorogenic acids composition, having good color and produced by selectively removing caffeine.

The method for producing a decaffeinated raw coffee bean extract comprises dissolving a caffeine-containing raw coffee bean extract containing 25-60 mass% of chlorogenic acids in a solid component into a mixed solution comprising an organic solvent and water at a mass ratio of 8/2 to 5/5, and bringing the obtained solution into contact with activated carbon and/or activated clay or acid clay.
