PROBLEM TO BE SOLVED: To produce powder of the fruit body of Grifola frondosa or Hericium erinaceum which has not an unpleasant smell, contains β-glucan in a large content, has a large bulk density and contains bacteria only in a small number, taking into consideration that Grifola frondosa and Hericium erinaceum accompany their dried products with the unpleasant smell and the smell is increased by being pulverized, which becomes a large obstacle to commercialization and propagation of powdered Grifola frondosa or powdered Hericium erinaceum as health food.
SOLUTION: The deodorized mushroom powder is produced by soaking the fruit body of Grifola frondosa or Hericium erinaceum into a heated acidic aqueous solution, drying the fruit body and crushing it. An aqueous solution of an inorganic acid such as hydrochloric acid, sulfuric acid or phosphoric acid, or an aqueous solution of an edible organic acid such as acetic acid, citric acid, malic acid, tartaric acid or succinic acid is used as the acidic aqueous solution. Both of the aqueous solution of the inorganic acid and the aqueous solution of the edible organic acid exhibit deodorizing effect but the edible organic acid is preferably used when taken into consideration that the mushroom powder product is for food and working environment and a liquid- waste disposal problem are concerned. Acetic acid and citric acid are preferable with respect to cost and effect when selected from the edible organic acids.
