Abstract:
To provide a method for producing dried bonito paste, dried tuna paste and dried sardine paste free from fishy smell.
Finely divided meat of bonito, tuna or sardine is kneaded, formed, thermally sterilized and dried with heat to obtain a dried fish paste. The kneading of the meat is carried out under deaeration, and the finely divided meat is prepared by cutting a frozen fish body, removing guts from the produced residues and grinding or cutting the remaining meat to 300 m.
