Abstract:

To provide a method for producing dried soybean powder that hardly contains components other than soybean and can produce dried soybean powder having oxidation resistance and high storability and oxidation resistance in a relatively short time.

Soybeans are washed with water, soaked in aqueous tocopherol solution for a prescribed time (soaking step), the soaked soybeans are steamed together with soaking solution (steaming step), the steamed soybeans are roughly crashed (crashing step), pectinase enzyme and tocopherol are added to the crushed soybean and water to obtain their mixture and the mixed solution are stirred at a temperature at which the pectinase is activated for a prescribed time (enzyme treatment step), the mixture after enzyme treatment is rapidly heated to be deactivated (deactivation step), then rapidly cooed down, then the mixture is screened and the solid substance in the mixed solution is finely crushed to the level of individual cells and individually separated (separation step) remove solids in the mixed solution and the resultant slurry is spray-dried to prepare the dried soybean powder.
