To provide a convenient method for producing a fatty acid alkanolamide compound of formula (III) in high purity and in high yield.

This method comprises condensation reaction between treatment product of an alkanolamine compound of formula (II) prepared by pretreating the compound of formula (II) with an alkaline treating agent consisting of a hydroxide or alcoholate of an alkali metal and an ester of 1-3C alkyl alcohol with a fatty acid of formula (I) or a triglyceride thereof. [R1 is a 5-21C (OH substituted) alkyl or alkenyl; R2 to R5 are each H, OH, a (OH substituted) 1-6C alkyl; and m, n and p are each 0-6 but m+n+p≤6].
