Abstract:
To provide a method for producing a fermented beer-taste beverage in which, while using a caffeine-less coffee raw material, the miscellaneous flavor is suppressed and the sharpness is good as well as the coffee-likeness is improved.SOLUTION: Provided is a production method, that is a method for producing fermented beer-taste beverage at least comprising a fermentation step of fermenting a raw material liquid with yeast, and the method includes adding caffeine-less coffee raw material to the raw material liquid prior to the end of the fermentation step, and in which the temperature of the raw material liquid when adding coffee raw material is more than 0°C and less than 100°C.SELECTED DRAWING: None
