This method for producing the fermented vinegar from the distillation residual liquid discharged from a process for producing the SHOCHU, characterized by including a process for fermenting an acetic acid bacterium having citric acid resistance in the distillation residual liquid containing ethanol in an amount sufficient for producing the fermented vinegar.
