To provide a method for easily producing food-material dry powder enabling easy pulverization of food raw material even containing starch material, paste material, oil-and-fat material and the like to get sticky, and also reducing the load on a pulverizer.
The method for producing food-material dry powder comprises drying moist food raw material, and dehydrating the material in a marginal range followed by pulverizing the dehydrated material into powder. In the method, it is preferable to heat the food raw material using both of a convection heater 8 and a heat radiation type heater 10 so as to apply overheated steam to the food raw material in a ventilated drying chamber 2 to dry the material. The heat radiation type heater 10 preferably uses a far-infrared radiation type heater.
