Abstract:

To provide a method for industrially advantageously producing a green-tea extract with reduced foreign substances such as caffein while efficiently collecting non-polymeric catechins contained in green tea leaves.

The method for producing the green-tea extract includes: a step A for drying raw tea leaves; a step B for extracting dried tea leaves obtained in the step A with water and obtaining an extraction residue by separating the extraction liquid; and a step C for extracting the extraction residue in the step B with water.
