Abstract:
To provide a method for producing indigestible starch composed of phosphoric acid-crosslinked starch with a high content of resistant starch.SOLUTION: A method for producing indigestible starch includes adding sodium trimetaphosphate to slurry containing raw material starch, wherein the slurry contains sodium salt that has the action of suppressing swelling of calcium salt and starch, and the amount of the added sodium trimetaphosphate is 10 pts.mass or more and 14 pts.mass or less relative to the 100 pts.mass of the raw material starch.SELECTED DRAWING: None
