Abstract:

PURPOSE: To improve quality of not only KOJI (yeast) but also SAKE and formation ratio of SAKE, enable effective utilization of resources and produce the KOJI usefully for the brewing industry by introducing a fermentation gas produced in a fermentation process into a KOJI producing apparatus.

CONSTITUTION: A fermentation gas produced in a fermentation process is extracted in a fermentation tank having a hermetically sealed structure for brewed unrefined SAKE and then introduced into a KOJI producing apparatus to utilize active ingredients contained in the fermentation gas and afford KOJI having desired properties.
