To provide a method for producing a liquid material from spent brewing malts by which the degree of coloring of the liquid material obtained, by using the spent brewing malts as a raw material is low and the liquid material can thereby be utilized suitably as a raw material, and the like, for producing foods.
The method for producing the liquid material from the spent brewing malts comprises a first step of mixing 100 pts.mass (on dry basis) of the spent brewing malts with 1-40 pts.mass of hydrogen peroxide, in the presence of water and irradiating the resulting mixture with microwaves under temperature conditions of 120-200C for 3-120 min and affording a solid-liquid mixture; and a second step of carrying out solid-liquid separation of the solid-liquid mixture and providing the liquid material. In the second step, the solid-liquid separation is carried out by filtration, and the resultant liquid material is freeze-dried.
