Abstract:

To provide a method for producing low-carbohydrate beer-taste alcoholic beverage by which the risk of microorganism pollution is extremely reduced, and to provide the low-carbohydrate beer-taste alcoholic beverage produced by the method.

The method for producing the low-carbohydrate beer-taste alcoholic beverage includes using a glucide raw material having ≤3.0% (w/w) of an oligosaccharide content, and containing 30-100% (w/w) of isomerized liquid sugar having ≤3.0% (w/w) of an oligosaccharide content. The low-carbohydrate beer-taste alcoholic beverage produced by the production method is also provided.
