Abstract:
To provide a dry fermented drink having mellow sour taste and fruitiness satisfying various preference values of customers by utilizing advantages of beer and a sparkling liquor and merits of fruits, and to provide a method for producing the drink.
The method for producing the fermentation drink includes a first fermentation zone for lactic fermentation of a fermentation raw material containing about 50 to 100% of fruit juice and a second fermentation zone for yeast fermentation of the fermentation raw material containing the obtained lactic fermentation liquid and a saccharified solution.
