Abstract:
To provide a method for producing noodles like handmade noodles, having smoothness and viscoelasticity like handmade noodles, and capable of producing by a noodle making machine, noodles which are slow in getting soft by boiling.
The method for producing the noodles like handmade noodles by a noodle making machine, includes adding 25-45 mass% of water, and 0.2-2.5 mass% of Cyamoposis Gum and/or xanthan gum in an aqueous solution or gel form, as a thickening agent, and further a pH adjusting agent so that the noodle dough has a pH of 6.3-7.5, to raw material grain flour.
