Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing an oligosaccharide (salt), capable of producing the oligosaccharide or its salt in a high yield, without causing discoloration of the oligosaccharide (salt), nor change in chemical structure thereof due to oxidation, by controlling reverse reaction of enzymolysis thereof.
SOLUTION: In this method for producing the oligosaccharide (salt), a first space and a second space are arranged in such a manner that the spaces are separated from each other by a partition having a permeable membrane through which oxygen is not permeated but the produced oligosaccharide (salt) is permeated, then a mucopolysaccharide or its salt is decomposed by an enzyme in the first space, and further the oligosaccharide (salt) which is formed by the decomposition and travels to the second space through the permeable membrane is recovered.
