Abstract:
To provide a method for producing phosphatidylserine with high yield and conversion and which excels in production workability, without the use of organic solvent.
The method for producing phosphatidylserine and/or its metal salt comprises (a) a step to prepare a phospholipid mixture by dissolving a phospholipid containing phosphatidylcholine and phosphatidylethanolamine in an oil-and-fat, (b) a step to prepare a dispersion by dispersing the phospholipid mixture in a buffer solution and (c) a step to prepare a reaction mixture by adding L-serine, phospholipase D and an alkaline earth metal salt to the dispersion and reacting the phospholipid with L-serine in the presence of the phospholipase D and the alkaline earth metal salt.
