Abstract:

To provide a method for producing processed cheese excellent in shape retainability and meltability to the mouth.

This method for producing the processed cheese comprises admixing molten salt to raw material cheese, and heating and melting the mixture. The heating and melting process of the method comprises stirring the mixture using a shearing cutter-type stirring blade so that the peripheral velocity of the stirring blade tip is within 2.5-7.5 m/s. It is preferable that sodium pyrophosphate and sodium polyphosphate are formulated as the molten salt each alone or at a formulation ratio of 1:1 so as to have its total mass of 1.0-3.0 mass% based on the processed cheese to be produced.
