Abstract:

To solve the problems of a salting process in a salted plum production process comprising the growth of a film-forming yeast on the surface of plum vinegar in a pickling tank to deteriorate the palatability of the salted plum and the plum vinegar and lower the production efficiency by the work to remove the film-forming yeast.

In the salting process S2 for the production of a salted plum fruit, the surface of plum vinegar 11 is shielded with a gas-barrier synthetic resin sheet 5 having a multilayer structure containing a gaseous layer as an intermediate layer. The synthetic resin sheet 5 always floating on the surface of the plum vinegar 11 shields the vinegar 11 from air to suppress the growth of film-forming yeast.
