PURPOSE: To readily obtain the title extract without any toxicity to human bodies at a low cost without deteriorating gymnemic acid, by coagulating a Gymnema sylvestre extract prepared by solid liquid separation with an acid at a specific pH, neutralizing and dissolving precipitates with an additive for a food.

CONSTITUTION: A crude Gymnema sylvestre(GS) extract solution obtained by solid liquid separation from a decoction prepared from dried leaves of the GS is coagulated with hydrochloric acid, sulfuric acid, etc., at pH1W4 (preferably pH1.5W2.5) to provide recovered precipitates, which are then neutralized and dissolved with an additive for food, such as KOH or NaOH. Cyclodextrin (CD) is then added to the resultant solution containing the neutralized and dissolved substance to carry out inclusion treatment with the CD. Thereby, the aimed extract is obtained.
