PURPOSE: To efficiently carry out the recovery of a lactenin fraction, containing an active immunoglobulin, a lactoferrin and a lactoperoxidase, excellent in antimicrobial properties and useful as a food, a medicine, etc., by treating skim milk under specific conditions.
CONSTITUTION: Skim milk is brought into contact with a sulfated polysaccharide substance such as sulfonated chitosan and an adsorbed fraction is then eluted with a salt solution to recover a fraction containing a lactoferrin and a lactoperoxidase. An unadsorbed fraction is subsequently coagulated with an acid or rennet to provide a whey fraction, which is then subjected to salting out treatment to recover a fraction containing an immunoglobulin. The recovered fraction containing the lactoferrin and lactoperoxidase is subsequently combined with the fraction containing the immunoglobulin and desalting and removal of a low-molecular fraction are carried out by using an ultrafiltration membrane having ≥50kD to recover a lactenin fraction containing the active immunoglobulin, lactoferrin and lactoperoxidase.
