PURPOSE: To reduce labor for operations to remove green tea incrustations and improve the operating efficiency of a green tea manufacturing machine by sprinkling (warm) water on a specific site at a prescribed time before completing a green tea manufacturing step and removing the green tea incrustations in the green tea manufacturing machine.

CONSTITUTION: This method for removing green tea incrustations is to sprinkle water or warm water into a rolling drum when the green tea manufacturing machine is a rough rolling machine and on a rolling board when the machine is a rolling and twisting machine at a prescribed time during a processing step for the green tea leaves or before completing the step, further continuously operate the green tea manufacturing machine during the remaining time of the step and thereby infiltrate the water or warm water into green tea incrustations sticking to members such as rolling hands 3, leaf scrapers 4 and bamboo duckboards 11 or the rolling board, soften the incrustations, then rub the softened incrustations with the green tea leaves during the processing and remove the tea incrustations. Specifically, e.g. a solenoid valve is opened on a signal from a control panel 5min before completing the step of the rough rolling machine to sprinkle water passing through a water sprinkling pipe 2 from nozzles 10 in the rolling drum.
