Abstract:
To provide a method for completely removing and sterilizing various kinds of bacteria attached to or included in the surface of egg shell, in consideration of the presence of the surface cuticle layer of the shell composed of 7-8 protein layers containing sugars and possible to diminish the effect of various bactericides on the bacteria existing in the layer and further promote the survival of the bacteria.
A hen's egg is sterilized by immersing the egg in a wood vinegar or spraying wood vinegar against the egg.
