PURPOSE: To enable sterilization without changing quality and flavor of a food by hermetically sealing the food in a can having an elastic part in the form of bellows, housing the can in a pressurizing chamber of a pressure vessel filled with a pressurizing medium, compressing and pressurizing the food through the pressurizing medium.
CONSTITUTION: A food is placed in a cylindrical can 1 having an elastic part (1a) in the form of bellows, compressible by applying a prescribed pressure thereto, restoring the shape by releasing the pressure and provided on the periphery thereof. The can 1 is then housed in a pressurizing chamber 9 of a pressure vessel 4. In a state filled with a pressurizing medium 10, the can is pressurized to a prescribed pressure, e.g. about 2000-4000kg/cm2, to sterilize the canned food.
