To provide a method for sterilizing chickens by which sterilization of chickens can safely, simply, persistently and effectively be carried out.

This method for sterilizing chickens comprises carrying out contact treatment of chickens with an aqueous solution of hinokitiol by at least one method selected from coating, spraying, rubbing and immersing in at least one step of an inside extraction step, a cooling step and a packaging step and/or at least one continuous step when producing chickens by treating chickens. In the sterilization method and the production method of chicken, the concentration of hinokitiol in the aqueous solution of hinokitiol is preferably 1-50,000 ppm and the pH of the aqueous solution of hinokitiol is preferably 4-11 and the treating temperature is preferably 0-70°C.
