Abstract:
To provide a milk protein concentrate which does not impair milk flavor while securing heat stability.SOLUTION: A milk protein concentrate in the present invention contains, with respect to 20 mass% of the total solid content, 9.0 mass% or more and 15.5 mass% or less protein, 0.20 mass% or more and 1.30 mass% or less of an ash content, 0.01 mass% or more and 0.08 mass% or less Na, 0.03 mass% or more and 0.36 mass% or less K, 0.08 mass% or more and 0.34 mass% or less Ca, more than 0.00 mass% and 0.02 mass% or less Mg, 0.08 mass% or more and 0.20 mass% or less P, and more than 0.00 mass% and 0.25 mass% or less Cl, and has heat solidification time at 130°C and a pH of 6.4 or more and 6.7 or less of 8 minutes or longer . A milk product having various rich milk flavors can be produced using the milk protein concentrate as a raw material.SELECTED DRAWING: Figure 1
