Abstract:
To obtain a Miso (fermented soybean paste) based nutritional food in a form matched with the modern society by excluding the drawbacks inherent in Miso-while making the best use of the characteristics of Miso.
This Miso-based nutritional food is obtained by drying into powder the Miso, especially less salt Miso or unsalted Miso, or a mixture of Miso as the main ingredient with other nutritional food(s). Another version of this food is obtained by pelletizing or encapsulating the powdery Miso obtained above.
