Abstract:

PURPOSE: To modify a polished rice having high amylose content to the taste close to that of polished rice having low amylose content by storing the polished high-amylose rice in a high-pressure carbon dioxide gas atmosphere and quickly reducing the pressure of the atmosphere.

CONSTITUTION: Non-glutinous rice having low amylose content in the starch, such as indica type rice, is filled in a pressure vessel 1 connected to a carbon dioxide gas cylinder 2 through a pump 3 and a heat-exchanger 4, the carbon dioxide gas in the gas cylinder 2 is heated at 40°C with the heat-exchanger 4 and pressed into the pressure vessel 1 with a pump 3 under a pressure of 100kgf/cm2G, the rice is kept for 30 min in the carbon dioxide gas atmosphere maintained at these temperature and pressure, the carbon dioxide gas is quickly released from the pressure vessel 1 by opening a gas releasing valve 8 and the modified rice is taken out of the pressure vessel 1. The polished rice having low amylose content such as indica type rice can be modified by this process to the taste close to that of rice having high amylopectin ratio and low amylose content.
